A new deli serving fresh salads and nutritious takeaway food has opened in Ripon.
Sprout & Crumb, at 85 North Street, is run by Luke Mills, whose career has included working alongside Michelin-starred chefs in London and Sheffield.
Luke worked with Herbert Berger at Lombard Street and Tessa Bramley at the Old Vicarage, and spent seven years as menu development chef at Filmore & Union. He has also worked at the Light Brigade Restaurant in New South Wales, Australia.
Customer feedback will help shape the menu at his new venture, which focuses on wholesome food made using locally sourced ingredients.
Luke said:
“For me, the most important ingredients are the customers, because their feedback helps me to create customised dishes which add to an ever-evolving choice, rather than just offering a set menu.”
He added:
“I’m open to suggestions and if I get asked to introduce a new dish to meet a particular taste, I will give it a go.
“The aim is always to provide wholesome and nutritious takeaway food using locally sourced ingredients and items, such as the fabulous sweet treats made by Leah Wright at The Wright Cake Bakery in Northallerton, which go so well with Lonton’s artisan filter coffee roasted in Teesdale.”
Luke’s wife Lucy runs the Sprouted Kitchen in Bedale and L Bar coffee shop at Leeming Bar.
He said the welcome from Ripon’s residents and fellow independent businesses had helped him settle into the city.
Luke said:
“We have been welcomed with open arms by local residents visitors and other independent business owners and it is clear that there is a real community feel here and a buzz on the streets.”
Sarita McDermott, owner of neighbouring Indian tearoom and bistro Realitea, also welcomed the opening.
She said:
“We’re delighted to welcome this lovely new addition to our local community — a lunchtime deli serving up fresh, healthy salads and tasty options to brighten up your lunch break.”
Ripon BID manager Lilla Bathurst said:
“Luke brings a wealth of experience to Ripon and the skills he has learnt in award-winning kitchens adds to the choice that the city’s food and drink sector offers visitors and local residents alike.”
Sprout & Crumb is open from 11am to 3pm on Tuesdays and from 10am to 3pm from Wednesday to Saturday.
