Simon has been at Grantley since the start and is understandably proud of the hotel's five red stars, one Michelin star and now "hotel of the year" status. The academy is flexible, fun and 50% getting the apprentices ready for the workplace and 50% knowledge, which includes recipes, theory and practical skills. The chefs academy also covers all the different cuisines served in Grantley's restaurants something that the team are again, very proud of and is unique to an academy of this kind...
